Ingredients:-
- 250 gms Small Brinjals
- 1/2 cup Onion Chopped
- 2 tea spoon Ginger Garlic Paste
- 2 Red Tomato Paste
- 1-2 Green Chilli
- 1/2 tea spoon Red Chilli Powder
- 1/2 tea spoon Turmeric Powder
- 1/2 tea spoon Garam Masala
- Salt(According to Taste)
- 2 table spoon of Cooking Oil
- 1 tea spoon Coriander Powder
- 2 table spoon of coriander leaves Chopped
Preparation Method:-
- Wash and Cut all Brinjals in long length pieces.
- Take a pan (Kadai) and heat some Cooking oil.
- Add chopped onions in it. Fry onions untill golden brown in colour.
- Add some ginger-garlic paste in it and fry it until its golden brown.
- When oil separates add some tomato paste.
- When oil leaves tomato and onion mixture, add some coriander powder, red chili powder, turmeric, garam masala and salt.
- Leave it for 1-2 minutes or until it starts leaving oil.
- When the masala is thoroughly fried, Add Brinjals, green chilies and stir until the spices cover the Brinjals.
- Cook it for 2-3 minutes and stir it in between.
- Add some water if needed.
- Continue cook it for another 5–7 minutes on low gas.
- Now it is ready to serve.
- Garnish it with coriander leaves.
- Serve it with Paratha or Chapati.
